In Catoosa and Walker counties, a total of 16 locations received a perfect health score of 100 points for inspections conducted during the last half of September. Several more received scores above 90.

A few locations didn’t quite hit the mark. Only one restaurant received a score below 80. Mike’s Pizza (Catoosa County), where the inspector observed several perishable temperature-controlled items kept at inappropriate temperatures, received a health score of 75.

Observed grease and food debris build-up on floors in main cook line area of kitchen. Also observed debris build-up on floors, walls, and ceiling inside the walk-in cooler that is primarily used for storing beer (1 point). Observed floors in the facility with minimal grout between tiles causing making it difficult for employees to keep the floors clean. The grout is down so low between the tiles that food and grease are remaining in the creases causing constant build-up. This is an ongoing issue and must be repaired in a timely manner. This is a repeat inspection and will require a plan of correction with dates stating when the floors will be repaired (1 point).

The pasta was tightly sealed in plastic bags and inside of containers with tight fitting lids, stacked on top of eahc other. The recorded temperatures on the containers were 38-40 degrees Fahrenheit, however the pasta was all 43-62 degrees Fahrenheit that had been made today (3 points). Observed food debris build-up on the shelves in dry storage and clean dish storage as well as on shelves in walk-in cooler (1 point).

Very heavy build-up on walls around the ware washing machine and the entire back portion of the kitchen. All floors and walls behind equipment and under equipment need to be cleaned (1 point). Observed missing coving around walls in the back of the facility. Coving will need to be replaced (1 point). Observed light shields with dead bugs and other debris.
